  • 2 tablespoons of powdered sugar

How to Make Bliny with Tvorog and Pumpkin

Heat the milk to 60-70 degrees, pour in the kefir, and stir quickly.

Let’s make the tvorog. Heat the milk to 60-70°C (140-158°F), pour in the kefir (a fermented milk drink similar to a thin yogurt), and stir quickly. Leave it in a warm place for 18-20 hours, or up to a day.

Line a colander with a linen cloth or cheesecloth, pour in the cheese curds, and let the whey drain. Place the tvorog (a fresh, soft farmer’s cheese), still in the cloth, in the refrigerator for 3-4 hours to drain the remaining whey.

The result is 450-475 g of dry homemade tvorog (lump-free, moderately fatty, and very tasty) and about 1 1/2 liters of tvorozhnaya syvorotka (whey). The whey can be frozen or stored in the refrigerator for several days.
