Ingredients for Barbie Beetroot Salad
- 200 g cooked beetroot
- 2 hard-boiled eggs
- 1 potato
- 1 carrot
- 2 pickled cucumbers
- 1 onion
- 15 g vegetable oil
- 40 g mayonnaise
- salt to taste
How to Make Barbie Beetroot Salad
Peel the potatoes and carrots. Dice the vegetables into cubes about half a centimeter in size. Place the chopped vegetables in a saucepan and pour in enough boiling water to just cover them. Salt to taste and bring to a boil quickly. Cook for 5-7 minutes; this is enough time for the finely chopped carrots to cook through, and the potatoes will definitely be ready.
Drain the boiled vegetables in a colander and spread them on a cutting board or a large plate to cool down faster. Don’t discard the vegetable broth; you can use it for a sauce or soup.
Once cooled, transfer the vegetables to a salad bowl.
Finely dice a small onion. Sauté the chopped onion in vegetable oil until soft, and salt to taste. Add the sautéed onion to the potatoes and carrots.
Hard-boil the chicken eggs, then grate them on a coarse grater or chop them with a knife. Add the eggs to the salad. By the way, for perfect hard-boiled eggs, you don’t need to boil them continuously. Just bring the water to a boil, turn off the heat, and let them sit for 10 minutes. The residual heat will cook them to the right consistency without any extra energy.
Finely chop the pickled cucumbers and add them to the other ingredients. I’ve tried making the Barbie salad with kvashenye ogurtsy (traditional fermented cucumbers), and it’s also delicious, but it’s even better with pickled ones.
Grate the cooked beetroot on a coarse grater. Add the grated beetroot to the salad. You can also bake the beetroot for this recipe: wash it thoroughly with a brush, wrap it in foil or parchment paper, and bake at 200°C (400°F) for 40 minutes to 1 hour. The time depends on the size of the beetroots.
Dress the salad with mayonnaise. For a delicious and not-too-caloric salad, one heaping tablespoon of mayonnaise per serving is enough.
Salt to taste and mix well until the beetroot stains all the ingredients with the color that gave the salad its name.
For a beautiful presentation, use a cooking ring. Place the ring on a plate, fill it with the salad, and press down gently with a spoon.
Remove the ring and garnish the Barbie salad with a sprig of dill!
