How to Make Baked Potatoes Stuffed with Chicken Breast

This recipe features new potatoes. Scrape the skins slightly, wash them, and dry them well with paper towels. If using mature potatoes, scrub them thoroughly with a rough sponge and dry them; there is no need to peel them.

Washing and drying raw potatoes on a cutting board

Thoroughly wash and dry the potatoes before cooking.

Rub the dried potatoes with softened butter. Sprinkle them with coarse salt and place them on a baking sheet lined with parchment paper.

Rub the potatoes with softened butter and sprinkle with coarse salt for flavor.

Preheat your oven to 200°C (400°F). Place the baking sheet with the potatoes in the hot oven. Bake for about an hour until fully cooked. The finished potatoes will feel light, and a fork or wooden skewer should pierce them easily.

Whole baked potatoes on a parchment-lined baking sheet

Bake the potatoes in the oven for about an hour until completely soft.

Let the potatoes cool slightly, then cut them in half. Use a teaspoon to scoop out the center of the potato halves, leaving a sturdy wall to create little cups. Arrange the prepared potato cups in an ovenproof baking dish.

Scooping out the centers of halved baked potatoes

Cut the cooled potatoes and carefully scoop out the centers with a spoon, leaving the walls intact.

Chop the chicken breast fillets finely with a knife, or run them through a meat grinder fitted with a coarse plate.

Finely chopping chicken breast on a wooden cutting board

For the filling, finely chop the chicken breast with a knife or use a meat grinder.

Finely dice the onion. Pour a couple of tablespoons of vegetable oil into a skillet and toss in the diced onion. Sauté for about 10 minutes until soft and translucent.

Sauté the finely diced onion in vegetable oil until soft.

Add the minced chicken to the onions. Season with salt to taste and sauté everything together for 5 minutes.

Add the chicken to the onions and sauté for 5 minutes.

Mash the scooped-out potato centers. Add the mashed potato to the sautéed chicken and onion mixture. Stir in 30 g (1 oz) of butter and half of the grated cheese. Mix everything well to complete our stuffing.

Mixing chicken, mashed potatoes, and butter in a skillet

Combine the sautéed chicken with the mashed potato centers, butter, and part of the grated cheese.

Generously stuff the potato halves with the prepared filling.

Tightly pack the prepared filling into the potato boats.

Prepare the sauce. Melt one tablespoon of butter along with one tablespoon of vegetable oil in a skillet. Sprinkle in the wheat flour and cook for 5 minutes until golden. Gradually whisk in the milk or heavy cream. Bring the mixture to a boil, season with salt to taste, and add a pinch of grated nutmeg. Pour this hot sauce over the stuffed potatoes.

Pouring hot white sauce over stuffed potato halves

Pour the hot milk, flour, and nutmeg sauce over the dish.

Finely grate the remaining cheese. Sprinkle the grated cheese evenly over the stuffed potatoes.

Add a final layer of grated cheese to create a mouth-watering crust.

Preheat the oven to 180°C (350°F). Place the baking dish in the preheated oven. Bake for about 20 minutes; all the ingredients are already cooked, so we just need them to meld together beautifully.

Serve the baked potatoes stuffed with chicken breast and cheese while they are still steaming to fully enjoy the gooey texture of the filling. Fresh vegetables make an excellent side, but homemade pickles or marinated mushrooms are also a great choice, their acidity perfectly cuts through the richness of the creamy sauce. If you feel like experimenting, try adding a few sautéed mushrooms or finely diced bell peppers to the filling for a pop of color. To make the dish look even more appetizing, sprinkle the potato cups with fresh chopped dill or scallions just before serving. If you have a couple of portions left over after dinner, they can easily be reheated in the microwave or oven, the potatoes will hold their shape, and the sauce will become even richer. The main secret to success here is using high-quality butter and having the patience to bake the tubers the first time until their walls are perfectly soft.
