How to Make Baked Pasta Nests with Minced Meat and Cheese

Add 50 g of cold meat broth or cold filtered water to the chilled ground beef.

Prepare the minced meat. To the chilled ground beef, add 50 g of cold meat broth or cold filtered water. This is an important step; a small amount of liquid won’t spoil the taste but will make the patties juicier.

Finely dice the onion or grate it on a coarse grater. Add the onion to the ground beef, along with half a teaspoon each of cutlet seasoning (a savory blend for meat patties, often including garlic, onion, and herbs) and sweet ground paprika. Salt to taste.

Place the nests in the boiling water and cook until al dente according to the package instructions. This usually takes 5-7 minutes. Do not discard the pasta water; you will need it later.

Snip the corner of the mayonnaise packet and squeeze a small swirl of mayonnaise onto each patty.


Slightly fluff each nest with a spoon to create a small indentation, and place a beef patty inside. Then, gently press the patty down to secure it in the nest.

Sprinkle the nests with the minced meat with finely grated hard cheese. Reserve a little cheese for the finishing touch. Choose any type of hard cheese you like; you can even use up leftover bits and pieces. The cheese will melt beautifully under the high heat and be delicious.

Snip the corner of the mayonnaise packet and squeeze a small swirl of mayonnaise onto each patty. Sprinkle the remaining cheese on top, which will stick well to the mayonnaise. Pour the reserved pasta water into the dish until it covers the nests. You can use chicken or meat broth instead of water. If the dish is not very deep, make sure the water doesn’t reach the rim. The water will boil in the oven, and if the sides are low, it might spill over and make a mess.
