While the classic Wiener Schnitzel is a culinary icon, this Baked Chopped Chicken Schnitzel offers a delightful and rustic twist popular in Eastern European home cooking. Instead of pounding a thin cutlet, we finely chop the chicken by hand, creating a wonderfully tender and juicy patty that's bursting with flavor. This method is not only incredibly simple—no special equipment needed—but it also results in a uniquely satisfying texture. It's the perfect comfort food: quick to prepare, baked instead of fried for a healthier touch, and guaranteed to please the whole family.

How to Make Baked Chopped Schnitzel
Preheat your oven right away, and while it’s heating up, prepare the minced mixture. In the 10 minutes the meat is in the oven, you can chop up a fresh vegetable salad.
First, cut the chicken breast fillet into cubes, then finely chop it with a cleaver.
Peel a small onion, chop it finely, and add it to the chopped meat.
Next, add the ingredients that will not only make the schnitzel tender but also help bind the mixture together. Cut the crust off the stale white bread and finely chop the crumb.
Spread the chopped bread on the board and pour heavy cream over it.
White chicken meat is quite dry, so to make the baked chopped chicken schnitzel juicy, we add a ‘fatty’ ingredient – grated Parmesan.
Season the mixture – add dried carrot, dried paprika flakes, a finely chopped bunch of fresh cilantro, and pour in the soy sauce.
Salt everything to your taste and chop the mass with the cleaver again. This is a crucial step in the preparation – during chopping, the ingredients mix well and are further minced.
Divide the mixture into two portions and form large, flat schnitzels. It’s impossible to transfer such a schnitzel by hand, but you should definitely visualize the shape of the final product.
Take a heavy-bottomed, non-stick pan, grease it with odorless vegetable oil, and place the two portions of the mixture inside. Shape the schnitzels directly in the pan to about one centimeter thick, then squeeze a thin line of mayonnaise on top.
Preheat the oven to 210°C (410°F), and place the pan in the hot oven for 12 minutes. For the last 3 minutes, you can switch to the broil/grill mode. There’s no need to flip them.
Serve the baked chopped chicken schnitzel immediately, piping hot from the oven. Season with black pepper, drizzle with lemon juice, and garnish with a sprig of rosemary.
And there you have it—a beautifully golden and succulent schnitzel, ready to be devoured! This dish pairs wonderfully with a variety of sides. Serve it with creamy mashed potatoes, a crisp green salad with a zesty vinaigrette, or a medley of roasted vegetables for a complete and satisfying meal.
For an extra touch of indulgence, feel free to sprinkle some grated cheese on top during the last few minutes of baking. We hope this simple yet elegant recipe brings warmth and flavor to your table. Enjoy your delicious homemade schnitzel!
