How to Cook Aromatic Chicken Sausages in a Mushroom and Eggplant Sauce
In a skillet greased with olive oil, melt the butter and fry the chicken sausages for 3 minutes on each side until they have a golden crust. Remove the sausages to a plate, but do not wash the skillet.
Mince the garlic cloves and slice the onion into thin strips. First, add the garlic to the skillet, then add the onion.
Trim the stalks and sprigs from the fennel. If the outer layer of the bulb is dry or wilted, remove it—don’t throw it away, it’s great for making stock. Finely chop the cleaned fennel and add it to the onion and garlic.
Next, add the thinly sliced eggplants. In this chicken sausage recipe, all the vegetables can be sautéed together without significantly changing the flavor.
Wipe the fresh champignon mushrooms with a paper towel and slice them thinly. Add the sliced mushrooms to the sautéed vegetables, sprinkle with salt, and simmer for 10 minutes. At this stage, the mushrooms will release a lot of moisture, which will evaporate quickly since the lid is off.
Then, pour the dry red wine into the skillet and reduce it by about half over medium heat. It’s best to use dry or semi-dry wine for sauces.
Return the fried sausages to the skillet. Strip the leaves from a few sprigs of thyme and one sprig of rosemary. Cook the sausages in the sauce, uncovered, for about 15 minutes. During this time, the vegetables will become tender, the alcohol from the wine will completely evaporate, and the sauce will thicken slightly.
Next, add the finely chopped fresh spinach. Young spinach can be chopped along with its stems.
Now, pour in the heavy cream, and season everything with salt and pepper to taste. You can substitute the cream with fresh smetana (a type of sour cream) or crème fraîche—choose whichever ingredient you have on hand or prefer. At this stage, you can also slice the sausages into smaller pieces. Using kitchen shears is convenient for this, as it won’t damage the non-stick coating.
Simmer the chicken sausages in the sauce for another 5-7 minutes, then remove the skillet from the heat and let it rest for a few minutes.
Serve the aromatic chicken sausages in their sauce immediately. Garnish with finely chopped green onions before serving.
And there you have it—a beautifully aromatic and satisfying dish ready to be enjoyed! This recipe is wonderful as is, but feel free to experiment. You could try different types of sausages, like pork or turkey, or add other seasonal vegetables. For serving, this dish pairs wonderfully with creamy mashed potatoes, polenta, or simply a crusty loaf of bread to soak up every last drop of the incredible sauce. We hope you love making and sharing this delightful meal with your loved ones. Bon appétit!
