Welcome to a delightful twist on a classic Eastern European comfort food! Draniki are traditionally savory potato pancakes, beloved for their crispy edges and tender centers. This recipe, however, swaps potatoes for fresh zucchini and sweet carrots, creating a lighter, healthier, and wonderfully vibrant version. These Zucchini and Carrot Draniki are incredibly easy to make, packed with flavor, and perfect for a quick breakfast, a light lunch, or a satisfying side dish. Ingredients for Zucchini and Carrot Draniki
- 600 g zucchini (flesh without seeds and skin)
- 100 g carrots
- 2 large eggs
- 20 g fresh dill
- 50 g all-purpose flour
- 1/2 teaspoon baking powder
- salt, vegetable oil for frying
How to Make Zucchini and Carrot Draniki
First, prepare the zucchini. Small, young zucchini (courgettes) with undeveloped seeds can be used whole without peeling. Larger, mature zucchini need to be peeled. Use a vegetable peeler to remove the thin layer of skin. Cut the zucchini in half and use a spoon to scoop out the soft core with the seeds. You will be left with the firm, dense flesh for cooking.
Grate the peeled and seeded zucchini on a coarse grater or shred it using a food processor.
Wash the carrots thoroughly with a brush and peel them. Grate the carrots on a fine (cheese) grater. Place the grated zucchini in a bowl and add the grated carrots.
Add salt to taste. Mix the shredded vegetables with the salt, then crack the chicken eggs into the mixture.
Finely chop the fresh dill. Add about 2 tablespoons of chopped dill to the bowl. Mix the vegetables with the eggs and dill thoroughly.
In a separate bowl, combine the all-purpose flour with the baking powder to ensure the leavening agent is evenly distributed. Add the flour mixture to the bowl with the vegetables. For a gluten-free diet, you can replace the wheat flour with rice flour.
Mix the batter well. If a lot of liquid is released, add an extra 1-2 tablespoons of flour, but no more. You can let the batter rest for 10-30 minutes, but it’s not necessary. Some recipes recommend squeezing the liquid out of the grated zucchini. In my opinion, this is unnecessary for draniki (a type of Eastern European vegetable fritter), and it’s not a great idea for baking either. Why discard the beneficial moisture that doesn’t cause any harm?
Pour vegetable oil into a thick-bottomed frying pan and heat it well. Spoon the batter into the hot oil to form the draniki. One tablespoon per fritter is enough; smaller ones are easier to flip.
Fry over medium heat until golden brown on both sides. Remove the zucchini draniki from the pan and place them on paper towels to absorb any excess oil.
Serve hot—they are incredibly delicious straight from the pan! A smetana (a popular Eastern European sour cream) sauce with garlic is an excellent accompaniment to this dish.
And there you have it—a plate of beautiful, golden Zucchini and Carrot Draniki, ready to be devoured! We hope you enjoy the simple pleasure of making and eating this wonderful dish. They are best served hot and crispy, straight from the pan. For a truly authentic experience, pair them with a dollop of smetana (or sour cream) and a sprinkle of fresh dill. Feel free to experiment by adding other vegetables or spices to the batter. Enjoy your delicious and wholesome meal!
