Welcome to a recipe that celebrates the art of turning simple ingredients into a truly comforting and delicious meal! This Italian-Style Chicken Gizzards dish is a fantastic example of nose-to-tail cooking, transforming a budget-friendly cut of meat into something incredibly tender and flavorful. While the name suggests Italian roots, the use of smetana (a creamy sour cream) and aromatic khmeli-suneli spice blend gives it a delightful Eastern European twist. The gizzards are slowly baked with a medley of root vegetables until they are melt-in-your-mouth soft, all enveloped in a rich, savory cream sauce. It's the perfect hearty dish for a cozy evening.
Ingredients for Italian-Style Chicken Gizzards
- 1 kg (about 2.2 lbs) chicken gizzards
- 100 g (about 3.5 oz) carrots
- 120 g (about 4.2 oz) onion
- 80 g (about 2.8 oz) celery root (celeriac)
- 100 g (about 3.5 oz) smetana (a type of sour cream, or use full-fat sour cream)
- 500 ml (about 2 cups) water
- 2 teaspoons khmeli-suneli (a traditional Georgian spice blend)
- 2 tablespoons all-purpose flour
- salt, pepper, vegetable oil to taste
How to Cook Italian-Style Chicken Gizzards
Chicken gizzards are usually sold cleaned, but I still recommend inspecting, cleaning, and sorting through them. Trim off any fat or yellow membranes and rinse them thoroughly. Place the gizzards in a large pot and cover with hot water. Bring to a boil and cook for 5-10 minutes over medium heat. It’s always a good practice to parboil any offal, discard the first water, and then proceed with the recipe.
Next, make the sour cream sauce. In a bowl, combine the all-purpose flour and smetana (a type of sour cream). Season with salt and khmeli-suneli (a traditional Georgian spice blend) to taste. Pour in cold water and mix until the sauce is smooth and free of lumps.
Drain the boiled chicken gizzards in a colander and rinse them under running water.
Pour 2 tablespoons of vegetable oil into the bottom of a deep, ovenproof dish. Place the boiled gizzards in the dish.
Finely chop the onion. Add the chopped onion to the dish, simply sprinkling it on top, and give the dish a little shake.
Slice the carrots into 3-millimeter thick rounds. Add them to the gizzards after the onion.
Peel the celery root and grate it on a coarse vegetable grater. Add the grated celery root to the other ingredients.
Pour the smetana sauce into the dish. There should be enough sauce to almost completely cover the contents. If it’s not enough, add a little more water or chicken broth.
Cover the dish with foil or a lid, leaving a small opening for steam to escape. Place the dish in a preheated oven. Bake for 1 hour and 30 minutes at 165-170°C (330-340°F). The cooking time depends on the quality of the chicken gizzards; check for tenderness after about an hour. Sometimes an hour is enough, but other times it might take up to 2 hours. Essentially, the dish is ready when the meat is soft and tender.
Arrange the chicken gizzards on a platter. Sprinkle with finely chopped parsley. Serve warm or cold.
And there you have it—a platter of beautifully tender and creamy chicken gizzards, ready to be enjoyed! This dish is wonderfully versatile and pairs perfectly with mashed potatoes, fluffy rice, or even a side of crusty bread to soak up every last drop of the delicious sauce. Don't be afraid to experiment with other herbs or spices to make it your own. We hope this recipe inspires you to explore different cuts of meat and discover the rich flavors they have to offer. Enjoy this comforting and soulful meal with your loved ones!
