How to cook Pork Plov with Dried Apricots and Cherry Tomatoes

First, prepare the meat. Cut the chilled boneless pork into pieces about 2 centimeters in size. Pat the meat pieces dry with a paper towel and sear them in well-heated refined olive oil for 1-2 minutes on each side.

In a dutch oven, heat the odorless olive oil (you can use any vegetable oil) and pork fat. Add finely chopped onion, crushed garlic cloves, and a chili pepper sliced into rings to the heated fat.

Dice the carrots into 1-centimeter cubes and sauté with the onion for 5-6 minutes.
