First, the potatoes need to be boiled. Peel the potatoes with a vegetable peeler. For a festive side dish, choose potatoes of a similar size; cut larger ones in half to ensure they are all uniform. Place the peeled potatoes in a pot and cover with cold water. Add salt to taste. Bring to a boil. Cook over medium heat for about 20 minutes. The potatoes are ready when a sharp knife or a toothpick can be inserted into them as easily as into butter.
