Ingredients for Stuffed Tomatoes with Cottage Cheese and Herbs
- 3 apple-sized tomatoes
- 60 g full-fat homemade tvorog (farmer's cheese or quark)
- 1 hard-boiled chicken egg
- small bunch of dill
- 1 tablespoon mayonnaise
- ground black pepper, salt, lemon juice
- parsley and green onions for garnish
How to Make Stuffed Tomatoes with Cottage Cheese and Herbs
Carve out cups from the tomatoes. This can be done in two ways. First, you can slice off the top and use a teaspoon to scoop out the seeds, leaving only the walls. Then, carve decorative zigzags with a small knife. Alternatively, make a zigzag cut around the top part of the tomato with a small, sharp knife, remove the “lid,” and clean out the insides. Don’t discard the scraps, juice, or seeds; they can be used in a sauce or added to a soup.
Sprinkle the tomato cups with salt. Place them in a colander to allow the excess water to drain out. You can also skewer them and hang them upside down over a board.
Now, let’s make the filling. Place full-fat homemade tvorog (a type of farmer’s cheese or quark) in a bowl. If the tvorog is lumpy, run it through a meat grinder or press it through a sieve. For one serving (an apple-sized tomato), you’ll need about 20g of tvorog or cream cheese, and 1 boiled egg for every three servings.
Finely chop a hard-boiled chicken egg. Add the chopped egg to the tvorog. Reserve a teaspoon of the egg yolk for garnish.
Add finely chopped dill. For three tomatoes, you’ll need about a tablespoon of chopped dill. Cilantro, green onions, or parsley also work well—choose any herbs to your liking.
Add table mustard and mayonnaise. Season with salt and freshly ground black pepper to taste. Squeeze in a little lemon juice. If you prefer, you can replace the mayonnaise with a thick, cold-pressed olive oil or make homemade mayonnaise with an olive oil base.
Mix the filling thoroughly. Taste it to make sure it’s delicious.
Rinse the tomatoes with cold water to wash off the salt. Pat the tomato cups dry with paper towels. Place about two tablespoons of filling into each tomato.
Fill all three tomatoes this way. Create a small mound of the tvorog filling on top.
Crumble the reserved egg yolk. Sprinkle the appetizer with the bright yellow crumbs.
Season with ground black pepper. Garnish with parsley leaves and finely chopped green onions. Serve immediately.
And there you have it—beautifully stuffed tomatoes that are as pleasing to the eye as they are to the palate! This dish is a celebration of fresh ingredients and simple preparation. Feel free to get creative with the filling by adding other ingredients like finely chopped bell peppers, cucumbers, or even a bit of garlic for an extra kick. Serve them on a bed of crisp lettuce or alongside some crusty bread for a more substantial meal. We hope you enjoy this light and healthy recipe. Happy cooking!
