How to Make Barbie Beetroot Salad

Peel the potatoes and carrots. Dice the vegetables into cubes about half a centimeter in size. Place the chopped vegetables in a saucepan and pour in enough boiling water to just cover them. Salt to taste and bring to a boil quickly. Cook for 5-7 minutes; this is enough time for the finely chopped carrots to cook through, and the potatoes will definitely be ready.

Drain the boiled vegetables in a colander and spread them on a cutting board or a large plate to cool down faster. Don’t discard the vegetable broth; you can use it for a sauce or soup.
Once cooled, transfer the vegetables to a salad bowl.

The residual heat will cook them to the right consistency without any extra energy.

Finely chop the pickled cucumbers and add them to the other ingredients. I’ve tried making the Barbie salad with kvashenye ogurtsy (traditional fermented cucumbers), and it’s also delicious, but it’s even better with pickled ones.
Grate the cooked beetroot on a coarse grater. Add the grated beetroot to the salad. You can also bake the beetroot for this recipe: wash it thoroughly with a brush, wrap it in foil or parchment paper, and bake at 200°C (400°F) for 40 minutes to 1 hour. The time depends on the size of the beetroots.
