Ingredients for Carrot Muffins with Nutmeg

- 100 g almonds
- 100 g carrots
- 1 large chicken egg
- 130 g granulated sugar
- 40 g olive oil
- 110 g all-purpose flour
- 35 g semolina (a type of coarse wheat flour)
- 1/3 of a whole nutmeg
- 1/2 teaspoon cinnamon
- sliced almonds and powdered sugar
- a pinch of salt
How to Make Carrot Muffins with Nutmeg
Wash the orange thoroughly, then place it in boiling water for half a minute. After scalding, wash the orange thoroughly again and zest the thin orange layer. This thorough washing is necessary for store-bought or market oranges. Fruits picked from your own garden may not need such treatment. Finely chop the orange zest with a knife.
Toast the almonds or any other nuts for a few minutes in the oven or on a dry skillet. Let them cool and then grind them into a fine crumb using a rolling pin or a food processor. Add the ground nuts to the bowl with the orange zest.
Grate the raw carrots on a coarse grater. Place the grated carrots in the bowl.
Crack a large chicken egg.
Add granulated sugar, and to balance the sweetness, add a pinch of fine salt.
Squeeze the juice from half of the orange. Peel the white pith from a few orange segments. Add the orange juice, orange segments, and neutral olive oil (odorless) to the bowl. Mix the ingredients thoroughly and let it sit for a few minutes for the sugar crystals to dissolve.

Fill paper liners with 80-100 g of batter, depending on the size of the liner. Place the paper liners with the batter into a muffin tin. This helps the muffins bake evenly, prevents them from burning, and keeps them from sticking. Plus, homemade muffins in paper liners look quite presentable.
Sprinkle the muffins with sliced almonds.
Place the muffins in the preheated oven (180°C / 350°F). Bake for 25 minutes. You can check for doneness with a wooden toothpick; if it comes out clean with no batter crumbs, the muffins are baked through and ready.
Cool the carrot muffins with nutmeg on a wire rack and sprinkle with powdered sugar.
