How to Make Tender Portuguese-Style Stewed Pork with Lentils

Cut the meat into large pieces against the grain. If the pork is fatty, it’s best to trim off the excess fat for this stew. Boiled fat isn’t the most pleasant thing to eat, in my opinion.

Make a simple marinade: sprinkle the meat with ground black pepper, add a few crumbled bay leaves, squeeze the juice from half a lemon, mix well, and let it sit for a couple of hours, or even overnight.

Place the marinated meat in a heavy-bottomed pot or a deep Dutch oven, add water, and bring to a boil.

Cover the pot and cook on low heat for about 40 minutes. The meat will be almost cooked through but still a bit tough. It will become soft and tender as it stews with the vegetables.
