How to Cook Pork with Vegetables in the Oven
Cut the meat into serving-sized pieces, trimming off any excess fat and anything unwanted (membranes, sinews). I used boneless pork belly, which takes less time to cook.
Next, lightly tenderize the meat pieces. You can do this with the dull edge of a wide knife.
Sprinkle the meat with caraway seeds, ground red pepper, and salt. Besides pepper and caraway, you can also use dried thyme, fennel, or rosemary, or a spice blend.
Grease a deep baking dish with vegetable oil and arrange the pork pieces in a single layer.
Cut a piece of parchment paper and cover the dish tightly. Place a sheet of foil over the parchment paper.
Preheat the oven to 170°C (340°F). Place the dish on the middle rack and cook for 35-40 minutes.
While the meat is cooking, prepare the vegetables separately for our pork and vegetable bake.
