  • 60 g onion
  • 60 g stale white bread
  • 35 ml heavy cream
  • 50 g Parmesan cheese
  • 20 g dried carrot
  • 15 g cilantro
  • 5 g paprika flakes
  • 10 ml soy sauce
  • 15 g mayonnaise
  • black pepper, table salt, vegetable oil
  • lemon or lime, rosemary

How to Make Baked Chopped Schnitzel

Preheat your oven right away, and while it’s heating up, prepare the minced mixture. In the 10 minutes the meat is in the oven, you can chop up a fresh vegetable salad.

First, cut the chicken breast fillet into cubes, then finely chop it with a cleaver.

Peel a small onion, chop it finely, and add it to the chopped meat.

Next, add the ingredients that will not only make the schnitzel tender but also help bind the mixture together. Cut the crust off the stale white bread and finely chop the crumb.

Season the mixture – add dried carrot, dried paprika flakes, a finely chopped bunch of fresh cilantro, and pour in the soy sauce.

Divide the mixture into two portions and form large, flat schnitzels. It’s impossible to transfer such a schnitzel by hand, but you should definitely visualize the shape of the final product.

Form the schnitzels

Take a heavy-bottomed, non-stick pan, grease it with odorless vegetable oil, and place the two portions of the mixture inside. Shape the schnitzels directly in the pan to about one centimeter thick, then squeeze a thin line of mayonnaise on top.

Preheat the oven to 210°C (410°F), and place the pan in the hot oven for 12 minutes. For the last 3 minutes, you can switch to the broil/grill mode. There’s no need to flip them.
