How to Make Pork Goulash with Gravy

Cut the pork for the goulash into small, evenly sized cubes. Pat the meat dry with a paper towel. Heat the vegetable oil in a skillet, add the meat in small batches to the hot oil, sear quickly, and transfer to a bowl.

If you have a large skillet, you can fry all the pork at once; if it’s small, do it in batches. If you add all the meat at once, the temperature of the hot oil will drop sharply, and the meat will stew instead of searing.
