How to Make Pickled Cucumbers with Onion and Green Chili for Winter
Thoroughly wash firm, fresh cucumbers and trim the ends. If you have any overgrown cucumbers, peel them, cut them open, and remove the seeds. Dice the prepared cucumbers into large cubes and place them in a heavy-bottomed pot.
Peel the small white onions and trim the root ends. Cut the onions into quarters. Add the chopped onion to the cucumbers.
Trim the tips and tops from a few green chili peppers. Roll the peppers between your palms to shake out the seeds. Slice the chilis into rings. Prick one chili pepper in several places and leave it whole. Add the sliced chili and the whole pepper to the onions and cucumbers.
Add the salt and granulated sugar. Every cook has their own favorite balance of sour, sweet, and salty in their marinades. I prefer a little less salt and a bit more sugar.

Thoroughly wash the canning jar and dry it in a hot oven for 10 minutes. Pack the boiling salad into the hot, dry jar, filling it to the top with the marinade from the pot. You might have a little marinade left over. If you don’t have enough, top up the jar with boiling water.
Cover the jar with a sterilized screw-top lid and seal it tightly. Place a wooden rack in a pot for sterilization. Set the jar of cucumbers on the rack and pour in water heated to 60°C (140°F), ensuring the water covers the lid. Bring to a boil. Sterilize a 500 ml (1 pint) jar for 12 minutes. Carefully remove the jar, turn it upside down, and wrap it in a towel. Once the cucumbers have completely cooled, store them in a dark, cool place.
