Ingredients for Marinated Cauliflower with Garlic

  • 1 kg cauliflower
  • 1 carrot
  • 1 red bell pepper
  • 1 head of garlic
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon each of cumin seeds and black peppercorns
  • 2-3 bay leaves
  • 12 g salt
  • 30 g sugar
  • 30 g white wine vinegar
  • 50 ml vegetable oil
  • water, red hot pepper to taste

How to Make Marinated Cauliflower with Garlic

Slice the peeled carrot into rounds about a quarter of an inch thick.

Break the head of cauliflower into small florets. You can save the core for a soup. If there are any dark spots on the florets, trim them off. Use only whole, undamaged florets for this recipe.

Thoroughly wash the carrot with a brush and peel it with a vegetable peeler. Slice the peeled carrot into rounds about a quarter of an inch (just under 0.5 cm) thick. Add them to the cauliflower.

Cut the red bell pepper in half, remove the seeds, and rinse the halves. Slice the flesh into strips. Add the sliced pepper to the bowl with the cauliflower and carrots.

Turn off the heat and stir in the apple or white wine vinegar.


Pour enough filtered water over the vegetables to cover them completely. Drain this water into a saucepan and bring it to a boil. Add the chopped vegetables to the boiling water and immediately turn off the heat. Let the vegetables sit in the hot water for 10 minutes. If you prefer slightly softer marinated vegetables, you can blanch the cauliflower for 1-2 minutes in boiling water, then drain and proceed with the recipe.

In a separate saucepan, combine the salt and sugar. Add the ground turmeric, cumin, black peppercorns, and bay leaves. If you like your food with a bit of a kick, you can also add half a teaspoon of red hot pepper flakes.

Drain the water from the vegetables into the saucepan with the spices, and pour in the vegetable or olive oil. Bring to a boil and simmer for 5 minutes. Turn off the heat and stir in the apple or white wine vinegar.
