How to Make Hearty Zucchini Fritters with Parmesan and Mushrooms

Peel the zucchini, and use a spoon to scoop out the soft center with the seeds, leaving only the firm flesh. Tender young zucchini can be used whole without peeling.

Grate the vegetable on a large box grater or shred it in a food processor, then place it in a deep bowl.

Important! You should salt the zucchini batter at the very end. If you salt it at this stage, it will release a lot of moisture, which you’ll either have to squeeze out or compensate for by adding extra flour.

Finely grate the Parmesan cheese. This type of cheese is ideal for zucchini fritters, and I don’t recommend substituting it with anything else. Add the grated Parmesan to the bowl.
