Ingredients for the Grechka

- 200 g yellow onion
- 100 g frozen mushrooms

- 50 g butter

- 200 g ground pork
- 200 g ground beef
- 50 g stale white bread
- 50 ml milk
- 60 g fried onion (2-3 tablespoons)
- salt, chili pepper to taste, chicken broth, soy sauce, oil for frying
How to Make Grechka with Tefteli in the Oven
This recipe uses a lot of onion, so let’s start there. Chop the onions into small rings or cubes. Pour a little vegetable oil into a frying pan, add the chopped onion, and then the butter. Cook over low heat until the onion is soft and almost translucent. This may take 10-15 minutes.
Now, prepare the mixture for the tefteli (small, tender meatballs). Combine the chilled ground pork and beef. Soak the stale white bread in milk. Add 2-3 tablespoons of the cooled fried onion and the soaked bread to the ground meat.
Season with salt to taste, add red pepper flakes or chili pepper, or your favorite meatball seasoning. Every home cook has their own special blend of spices. Mix the ground meat mixture thoroughly.
Form small tefteli, about the size of a ping-pong ball. Grease a frying pan with vegetable oil and place the tefteli in it. Quickly sear them on both sides, then pour in half a cup of meat or chicken broth.
Add a tablespoon of soy sauce to the pan with the tefteli. Let the broth and sauce reduce for about 5 minutes over medium heat.

Julienne the carrots. Add the sliced carrots to the onions and mushrooms.

Spread the grechka in an even layer.

Boil some water or heat chicken or meat broth to a boil. Pour the liquid into the pan so that it is about 1.5 cm (a little over half an inch) above the grechka. The tefteli can stick out above the liquid. Add salt to taste at this stage.
Cover the pan with a lid or foil, leaving a small opening for steam to escape. Preheat the oven to 165°C (325°F). Bake the grechka with tefteli for 50 minutes. Remove the dish from the oven, cover it with a towel, and let it rest for 15 minutes before serving.
