How to Make Vegan Corn Soup

Finely chop a large onion. Halve the leek lengthwise, rinse under running water, and finely chop. Dirt sometimes hides between the leek layers, so always wash them well to avoid a gritty crunch. Dice the celery stalks into small cubes. Pour olive oil into a pot, add the chopped vegetables, and sprinkle with a pinch of salt. Cook over low heat for 10 minutes until softened.
