How to Make Stewed Beans with Smoked Sausages in Tomato Sauce
For long-term storage, beans are thoroughly dried, leaving them with almost no moisture. It takes a long time for the dry legumes to reabsorb water. Therefore, to ensure the beans cook quickly and turn out soft and tasty, they must be soaked beforehand for at least 3-4 hours, preferably for 8-12 hours, or ideally, overnight.
Once the beans have absorbed water, put them on to boil, adding a little more water if necessary. Cook at a gentle simmer for about half an hour, until they are almost done but starting to soften. Don’t forget to add salt!
Meanwhile, let’s prepare the tomato and vegetable sauce. Peel and rinse the onion and carrots. Finely chop the onion and lightly sauté it in vegetable oil, stirring, for 2-3 minutes until it becomes slightly translucent. Use a deep skillet so that it can later accommodate the beans and the sauce.
