- 400 g ground meat (pork, beef, pork fat)
- 20 g green onions
- 40 g leek
- 50 ml milk
- 1 tsp dried seasoning
- 1 tsp paprika

To the chilled ground meat, add sweet paprika and salt to taste. Add one teaspoon of dried seasoning—in this recipe, we use Herbes de Provence. If you like, add a teaspoon of spicy adjika (a spicy paste, typically made with red peppers, garlic, and herbs) made from chili and garlic.
The leek stalk should be cut lengthwise and rinsed under cold running water, as sand can get trapped between the leaves. Finely chop the light part of the leek; save the green leaves for broth. Finely chop a small bunch of green onions. Add the leek and green onions to the ground meat.
Pour in the cold milk. There are several secrets to juicy cutlets, and one of them is adding milk or water, about 10% of the total weight of the meat. Eggs and bread are usually added to increase the volume, but for delicious cutlets, meat and onions are enough, believe me!
Mix the ground meat thoroughly. It’s best to do this by hand, wearing thin disposable gloves. The meat mixture is like dough—the more you knead it, the tastier it will be. At this stage, you can refrigerate the prepared cutlet mixture for 30 minutes to 1 hour.
Divide the meat into 4 equal parts and form thick, round cutlets. You can use a cooking ring to give the cutlets a perfect shape. There are also special presses that, in addition to a metal ring, have a tool for compacting, making the cutlets as uniform as hockey pucks.
Heat a thick-bottomed skillet. Cut a sheet of parchment paper and place it on the heated skillet. Place the cutlets on the paper, leaving a small space between them. Fry for about 4 minutes on medium heat on one side.
Carefully flip the cutlets and fry for another 4 minutes on the other side. Remove the skillet from the heat and let it rest for 5 minutes. I check for doneness by pressing the center of a cutlet; it should spring back. If your finger sinks in and a lot of juice is released, it needs a little more time.
