Wash the vegetables; peel the potatoes and pumpkin, remove the papery skin from the onion, and core the bell peppers, removing the stems.
Cut the potatoes and pumpkin into sticks, similar to French fries. It’s most convenient to use a vegetable slicer or mandoline: this ensures the pieces are even, well-shaped, and of a uniform size – which is important for them to bake evenly. Slice the onion into thin rings; cut the pepper into rings or strips, whichever you prefer.
You can cook the potatoes and pumpkin in two ways: pan-fry them in a skillet or bake them in the oven. I prefer the second option, as baked food is much healthier and, in most cases, tastier. However, it’s still a good idea to lightly pan-fry the vegetables first – this reduces the overall cooking time.
First, add the potatoes to a skillet with preheated oil, as they take longer to cook than the other vegetables. Stirring occasionally, pan-fry over medium-high heat for 4-5 minutes.
Next, add the pumpkin pieces and, after stirring, continue to fry for another 2-3 minutes. Pumpkin is softer than potatoes and will cook faster.
Add the most delicate vegetables, the bell pepper and onion, 1-2 minutes before turning off the heat. Season the vegetables with salt, pepper, and spices, and stir to combine.
If you have an oven-safe skillet with a heat-resistant handle – like a cast-iron one – you can place it directly in the oven to bake. Alternatively, transfer the vegetables to a greased baking dish – glass, ceramic, or foil will work.
Place the dish in a preheated oven and bake at 180-200°C (350-400°F) on the middle rack until the vegetables are tender. This will take between 30 and 45 minutes – the exact time depends on your oven and the size of the vegetable pieces. Check the potatoes with a wooden skewer: if they are soft, then all the other vegetables are ready too.
