How to Make Honey and Poppy Seed Cookies
Soften the butter to the consistency of thick sour cream, then add fine granulated sugar. Cream the butter and sugar together. You can quickly soften butter in the microwave, in a slightly warm oven, or by placing the bowl in a larger pot or sink filled with warm water.
Break large chicken eggs into a separate bowl, separating the yolks from the whites. Add the two yolks to the butter and sugar mixture. The egg whites are not needed for this recipe; you can freeze them for later use.
Beat the butter, sugar, and yolks together, then add a pinch of ground turmeric to give the dough a lovely golden color.
In a separate bowl, combine the all-purpose flour with baking powder and vanilla powder. Add the flour mixture to the butter mixture, and pour in one tablespoon of cold milk or water.
Quickly knead the dough. If it seems too crumbly, add another tablespoon of milk. Gather the finished dough into a ball and cover it with plastic wrap. Let it rest in the refrigerator for 30 minutes to 2 hours. It’s essential for the dough to rest for a while.
Once rested, roll the dough into balls, each weighing about 20 g. Line a baking sheet with parchment paper. Place the dough balls on the sheet, leaving some space between them, as they will expand during baking due to the baking powder.
Gently press down on the dough balls with a spatula to flatten them into discs. Make an indentation in the center of each cookie using the handle of a spoon, a lipstick tube, or your thumb. Preheat the oven to 180°C (350°F). Place the baking sheet in the preheated oven for 12 minutes.

Remove the baking sheet with the cookies, but do not turn off the oven! Using a small spoon, place thick honey into the indentations of the cookies.

Sprinkle the honey with poppy seeds. The poppy seeds will stick to the honey but won’t adhere to the dough itself.
Return the baking sheet to the hot oven for another 2-3 minutes. At this stage, it’s a good idea to rotate the baking sheet 180 degrees to ensure the cookies bake evenly.
The honey will melt and spread under the high heat. Do not leave the baking sheet in the oven for more than 3 minutes, as the honey will start to burn! Use a silicone pastry brush to spread the hot honey and poppy seeds over the surface of the cookies.
Let the honey and poppy seed cookies cool on a wire rack. Serve with tea or coffee.
And there you have it – a batch of beautiful, golden Honey and Poppy Seed Cookies ready to be enjoyed! The final glaze of hot honey and poppy seeds not only adds a lovely sheen but also locks in that wonderful flavor.
For serving, these cookies are fantastic on their own but also pair wonderfully with a glass of cold milk or a warm cup of herbal tea. To keep them fresh, store them in an airtight container at room temperature for up to a week. For a little twist, you could even add a pinch of cinnamon or a bit of lemon zest to the dough. We hope you love baking and sharing these delightful treats as much as we do. Happy baking!
