Welcome to a unique twist on a classic Eastern European dish! Today, we're making Solyanka Sbornaya, but not as the traditional soup you might know. This is a hearty, one-pan stew with tender chicken and creamy Arborio rice. The name 'Sbornaya' translates to 'combined' or 'assembled,' perfectly describing how this dish brings together a medley of vegetables, often whatever you have on hand. It’s a true 'clean-out-the-fridge' champion! What makes Solyanka truly special is its signature tangy flavor, which we'll get from savory pickles. Get ready for a comforting, flavorful meal that's both rustic and incredibly satisfying!
Ingredients for Solyanka Sbornaya with Chicken and Arborio Rice
- 0.5 kg chicken thighs
- 300 g cabbage
- 200 g celery stalks
- 100 g zucchini
- 80 g onion
- 130 g carrots
- 120 g green beans
- 150 g potatoes
- 60 g Arborio rice
- 60 g solyonye ogurtsy (salt-cured pickles)
- 2 cloves garlic
- 2 chili peppers
- 5 g ground paprika
- olive oil, salt, bay leaf
How to cook Solyanka Sbornaya with Chicken and Arborio Rice
Debone the chicken thighs—cut the meat off the bones, remove the skin, and chop it into small pieces. Heat 2 tablespoons of olive oil in a frying pan or braiser, sear the meat in small batches on each side, and then set it aside on a plate.
Peel the garlic and chili pepper, and sauté them for a few seconds in the same pan used for the chicken to flavor the oil. I recommend removing the seeds and the thin membrane from the chili pepper to prevent the dish from becoming too spicy.
Add finely chopped onion, diced carrots, and celery. Sauté the vegetables for 10 minutes until they become soft and translucent.
Return the seared chicken pieces to the pan and cook everything together for a few minutes before assembling the rest of the dish.
First, add the peeled and diced raw potatoes and thinly shredded cabbage. You can substitute regular cabbage with Napa or Savoy cabbage for an even tastier result.
Next, add the green beans and zucchini. You can use either fresh or frozen green beans. If using fresh, trim the ends off both sides.
Peel the solyonye ogurtsy (salt-cured pickles) and chop them finely. Add the rice, pickles, ground paprika, and 2 bay leaves to the other ingredients. Salt everything to taste.
Pour about 100 ml of water or broth into the pan, cover with a lid, and cook over low heat for 25 minutes. If all the liquid evaporates during cooking, add a little hot water.
Sprinkle the finished dish with fresh herbs, such as basil, and serve immediately.
And there you have it—a beautiful and hearty Solyanka Sbornaya with chicken and rice, ready to be enjoyed! This dish is a testament to the resourcefulness of Eastern European cuisine, turning simple, available ingredients into something truly special. Serve it hot, garnished with a sprinkle of fresh herbs like dill or parsley. A dollop of sour cream on top would also be a delicious, traditional touch. I hope you enjoy this comforting stew. It's perfect for a cozy family dinner and a wonderful way to explore the rich flavors of Russian cooking. Bon appétit, or as we say, Priyatnogo appetita!
