  • 220 g white Jasmine rice
  • 250 g zucchini
  • 250 g celery stalks
  • 250 g carrots
  • 1 onion
  • 3 cloves of garlic
  • 1 green chili pepper
  • 30 ml grapeseed oil
  • 200 g green olives, stuffed with pepper
  • ground paprika, salt

How to cook Jasmine Rice with Zucchini and Olives.

In a deep pan or Dutch oven, heat the grapeseed oil. Then add a finely sliced onion (in half-moons) and sauté for 5 minutes. Add the garlic cloves, sliced, and fry for about another half a minute. Garlic shouldn’t be fried for too long or on high heat: due to its high sugar content, it burns quickly.

Slice the celery stalks crosswise into 1-centimeter thick pieces. Julienne the carrot. Add the carrot and celery to the pan and sauté for 5-7 minutes.
