Welcome to a recipe that's a true star of any celebration! Layered salads are a beloved tradition in many Eastern European countries, known for their beautiful presentation and rich, complex flavors. This particular Layered Salad with Red Fish is a modern classic, blending familiar, comforting ingredients with a subtle nod to Japanese cuisine through its use of sushi rice and a zesty wasabi-infused dressing. It's an elegant, satisfying appetizer that looks like it came from a gourmet restaurant but is surprisingly simple to assemble at home. Perfect for holidays, dinner parties, or whenever you want to treat yourself to something special.
Ingredients for Layered Salad with Red Fish
- 200 g cooked round-grain rice (sushi rice)
- 200 g lightly salted red fish (trout, salmon)
- 150 g fresh cucumbers
- 4 hard-boiled chicken eggs
- 80 g high-quality mayonnaise
- 80 g smetana (or full-fat sour cream)
- small bunch of dill
- 1/2 teaspoon wasabi
- sea salt and lemon to taste
How to Make Layered Salad with Red Fish
First, cook the round-grain rice. Place 1 cup of sushi rice in cold water, rinse it, and drain through a sieve. Repeat rinsing several times until the water runs clear. Then, put the rinsed rice in a saucepan and add 1 cup of cold water. Bring to a boil and season with salt to taste. Cover with a lid. Cook for 10 minutes on low heat, then turn off the heat. Wrap the saucepan in a towel and let it sit for 10-15 minutes. Squeeze in lemon juice to taste and mix.
Place a cooking ring on a flat plate. Add the rice into the ring, level it, and press down slightly. You can use a potato masher or a glass with a flat bottom to press the rice.
Next, make the dressing for the salad. Combine mayonnaise, smetana (a high-fat Eastern European sour cream), 1-2 tablespoons of finely chopped dill, and wasabi. Season with salt to taste and whisk well with a fork. If you like, you can add a pinch of ground black pepper for aroma. For a greener sauce, you can mash the dill with salt beforehand. Generously spread the prepared sauce over the rice layer.
Cut the fresh cucumbers lengthwise and scoop out the seeds with a teaspoon. Dice the cucumbers into small cubes. Place the cucumber layer on top of the rice.
Generously coat the cucumbers with the sauce as well. The sauce serves two main purposes in this recipe. First and foremost, it adds flavor. Secondly, it binds the loose layers together, helping the salad hold its shape.
Place the eggs in a saucepan and cover with cold water. Bring to a boil, then turn off the heat. After 10 minutes, drain the hot water and pour in cold water. Peel the eggs and separate the yolks from the whites. Grate the egg whites on a fine grater, create a layer of whites, and spread with sauce.
When cooked this way, the egg yolks remain bright, making the yellow stripe in the salad stand out! Grate the yolks on a fine grater and sprinkle them over the whites.
Spread all the remaining sauce over the egg yolks and level it.
Place the lightly salted trout on a cutting board, skin-side down. Carefully slice the fillet off the skin with a wide, sharp knife. Dice the trout fillet into small cubes. Arrange the diced fish on top. Place the salad in the cooking ring in the refrigerator. The ring should be removed just before serving.
Before serving, remove the ring. Garnish the layered salad with red fish with dill sprigs, drizzle with lemon juice, and serve.
And there you have it—a stunning layered salad that's sure to capture everyone's attention and delight their taste buds! We hope you enjoy the process of creating these beautiful, distinct layers and, of course, the delicious result. This salad is best served chilled, allowing the flavors to meld together perfectly. It pairs wonderfully with a crisp white wine. Feel free to experiment by adding a layer of creamy avocado or using smoked salmon for a different flavor profile.
