Soak fresh wild mushrooms in cold water for a few minutes. Then, rinse them in a colander under running water. Scrape the stems, peel the skin from suillus mushrooms; the caps of xerocomus and birch boletes do not need to be cleaned. Chop the mushrooms into large pieces.

Cover the chopped mushrooms with cold water and bring to a boil. Immediately drain them in a colander, discarding the first water. Then, cover the mushrooms with fresh water again. Simmer on low heat for 30 minutes after it comes to a boil. Drain the boiled mushrooms in a colander and strain the broth. You can freeze the mushroom broth and use it later for soups or sauces. You can also make this dish with champignons (button mushrooms). I recommend boiling champignons for 5-7 minutes beforehand, then follow the recipe. To enhance the flavor when using champignons, you can add dried mushrooms; just one dried porcini mushroom is enough for a rich aroma.

Remove the outer leaves from the head of cabbage. Shred the cabbage into thin strips and sprinkle with salt. Massage the cabbage with the salt using your hands to make it softer.

Chopped onions being sautéed in a hot skillet with oil.

Add the chopped onion to the hot oil.

Pour some neutral vegetable oil into a braiser or a deep skillet. Finely chop a large onion. Add the chopped onion to the heated oil. Pour in 2-3 tablespoons of the mushroom broth. Sprinkle the onion with salt. Sauté over medium heat for about 10 minutes, until the onion becomes translucent.

Add the boiled mushrooms to the sautéed onion. Fry the mushrooms with the onion for 5-7 minutes.

Place the shredded cabbage into the skillet. Pour in 1/2 cup of the mushroom broth. Salt to taste. Cover the skillet with a lid. Braise the cabbage on low heat for 30 minutes.

Ten minutes before it’s done, remove the lid. Sprinkle the cabbage with finely chopped fresh or dried dill. Continue cooking without the lid, stirring occasionally, to allow the excess moisture to evaporate.
