Ingredients for Rice with Tofu and Mushrooms
- 100 g white rice
- 100 g tofu
- 150 g champignon mushrooms
- 1 carrot
- 1 onion
- 2 tablespoons olive oil
- 2 tablespoons rice flour
- 1 clove of garlic
- salt, black pepper to taste
How to Make Rice with Tofu and Mushrooms
First, cook the rice. Rinse the grains several times with cold water until the water runs clear. Drain the rinsed rice in a sieve to let the excess water run off. You can use any white rice for this recipe; long-grain or short-grain doesn’t matter. Aromatic rice like jasmine or basmati will add a special touch to the dish.
Place the rice in a heavy-bottomed pot and add 150 ml of cold water. Bring to a boil and salt to taste. Reduce the heat, cover the pot with a lid, and cook for 10 minutes on low heat. Turn off the heat. Wrap the pot with the rice in a towel and let it sit for 10-15 minutes.
Wash the fresh champignon mushrooms and pat them dry with a paper towel. Slice the mushrooms thinly. Heat a little olive oil in a frying pan, add the mushrooms, and quickly fry until golden brown. Remove the pan from the heat, salt the mushrooms, and add a clove of garlic passed through a press. For the mushrooms to brown nicely and not shrink like raisins, don’t overcrowd the pan; leave some space between them and cook quickly over high heat. This way, they won’t release their juices and will be beautifully browned.
Finely dice a small onion. Grate one carrot on a coarse grater. Sauté the vegetables in olive oil for 10 minutes, stirring to prevent them from burning.
Once the carrots and onions are cooked, add the boiled rice to the pan.
Next, add the fried mushrooms. Mix everything well and let it simmer on low heat, allowing the rice to absorb the juices from the vegetables and mushrooms.
Cut the plain tofu into 2-centimeter cubes. Place some rice flour in a bowl and coat the tofu cubes in it. It’s not necessary to use rice flour for this recipe; regular wheat flour will also work. Tofu is almost tasteless and acts like a sponge, absorbing the flavors around it. Therefore, fry it quickly and remove it from the pan immediately. You can even place it on paper towels to get rid of excess oil!
In a frying pan, heat 2 tablespoons of refined vegetable oil for frying. Place the tofu in the hot oil. Fry for 3-4 minutes until golden brown, shaking the pan to ensure the tofu is evenly browned on all sides.
Transfer the fried tofu to the pan with the rice, vegetables, and mushrooms, and mix.
Serve the rice with tofu warm or hot.
And there you have it—a beautiful and nutritious bowl of Rice with Tofu and Mushrooms! We hope you enjoy the wonderful combination of flavors and textures in this simple yet elegant dish. Feel free to customize it by adding a splash of soy sauce for an extra umami kick, or tossing in other vegetables like broccoli or bell peppers. Garnish with fresh cilantro or green onions for a burst of freshness. Enjoy your delicious, homemade meal!
