Ingredients for Condensed Milk Cake with Nuts
- 1 can (400 g / 14 oz) sweetened condensed milk
- 50 g neutral vegetable oil
- 2 large eggs
- 150 g all-purpose flour
- 1 teaspoon baking powder (level)
- 80 g cashew nuts
- 80 g dates
- vanillin or vanilla extract
- butter, for greasing the pan
- powdered sugar, for dusting
How to Make Condensed Milk Cake with Nuts
In a bowl, combine the all-purpose flour or cake flour with the baking powder. Baking powder can be substituted with baking soda and vinegar – use 1/2 teaspoon of baking soda and 2 teaspoons of 6% vinegar. Mix the soda with the flour, and add the vinegar to the liquid ingredients. If you are using vanillin or vanilla sugar, add it at this stage. Whisk the dry ingredients together.
In another bowl, mix the sweetened condensed milk with a refined vegetable oil (one without a strong smell). Corn, canola, or sunflower oil will work well.
Crack the eggs into the bowl. Whisk the liquid ingredients with a whisk or an immersion blender until smooth. If you are using vanilla extract, add it to the batter at this stage.
Combine the dry and wet ingredients.
Quickly mix the batter and let it rest for 10 minutes. In the meantime, prepare the nuts and dates.
Pit the dates and chop them finely. Crush the cashews with a rolling pin, grind them in a blender, or chop them with a knife. Add the nuts and dates to the batter.
Generously grease a sheet of parchment paper with softened butter. Line the bread machine pan with the greased paper. If you are baking the cake in an oven, line the bottom and sides of the baking pan with greased parchment paper, or grease it with butter and dust with all-purpose flour.
Pour the batter into the prepared pan. Place the pan in the bread machine. Set the baking time to 1 hour and 10 minutes. If you are baking in an oven, preheat it to 180°C (350°F) and place the pan on the middle rack.
Once baking is complete, turn off the machine. Leave the cake inside the closed machine for 12 minutes.
Remove the finished cake from the pan and let it cool on a wire rack.
Dust with powdered sugar through a fine-mesh sieve.
Serve the finished condensed milk cake with nuts and dates with tea.
And there you have it—a beautiful, golden cake ready to be enjoyed! We hope you love the rich flavor and tender texture as much as we do. This cake is wonderfully versatile; feel free to experiment by swapping cashews for walnuts or pecans, or using other dried fruits like apricots or raisins. It's best served warm with a cup of freshly brewed tea or coffee, but a slice is just as delightful the next day. Store any leftovers in an airtight container at room temperature for up to three days. Happy baking, and enjoy every delicious moment!
