Coconut Cupcake Ingredients
- 50 g butter
- 80 g granulated sugar
- 1 large egg
- 60 ml coconut milk
- 80 g all-purpose flour

- 1 teaspoon vanilla extract
- 1 teaspoon baking powder

How to Make Coconut Cupcakes
Dice the butter. If you take the butter out of the refrigerator in advance, it will reach the right consistency in about half an hour.
If the butter is cold, you’ll need to melt it using any convenient method. For example, place the bowl with the butter in a warm oven for a minute. The butter will instantly become soft and slightly melted.
Whisk the butter and add the fine white sugar. Add a teaspoon of vanilla extract.
Whisk the butter with sugar and vanilla for a few minutes. When the mixture becomes light and the sugar crystals have almost dissolved, you can add the remaining ingredients.
Crack in a chicken egg. It’s best to take the egg out of the refrigerator beforehand to let it warm up. A cold egg will cool the butter, which might cause it to curdle. This isn’t a major problem; just add a teaspoon of flour, mix, and everything will become smooth again.
Pour in the coconut milk. Whisk the ingredients together.
Add the all-purpose flour mixed with baking powder. Mix the wet and dry ingredients until smooth.
Add the shredded coconut. By weight, 40-50 g is enough, or if measuring by spoon, 3-4 tablespoons will be just right.
Mix the shredded coconut into the batter.
