How to Make Skillet Braised Cabbage with Meatballs

Meatballs being pan-fried in a skillet until they are golden brown on all sides.

Quickly pan-fry the meatballs on both sides until golden brown.

Sliced onions being added to a skillet with garlic and spices to create a flavor base.

Sauté for half a minute, then add the sliced onion.

A large amount of shredded white cabbage being added to the skillet with sautéed onions.

Add the cabbage to the skillet.

Pour vegetable oil for frying into a heavy-bottomed skillet and heat it up. Quickly pan-fry the meatballs on both sides until golden brown. Remove the meatballs from the skillet and transfer them to a bowl. You can continue to cook the cabbage in the same skillet, just wipe it clean with a paper towel.

Pour about a tablespoon of vegetable oil into the skillet. Add a finely chopped garlic clove and half a teaspoon of adjika (a spicy paste from the Caucasus region) to the heated oil. Sauté for half a minute, then add the sliced onion. Sauté the onion over medium heat for 5 minutes, stirring with a spatula.

Remove the outer leaves from the cabbage head. Shred the cabbage into thin strips and knead it with your hands for a couple of minutes to soften it and reduce its volume. Place the cabbage in the skillet.

Shredded cabbage being mixed with sautéed onions in a large skillet over the stove.

Mix the cabbage with the sautéed onion and increase the heat.

Mix the cabbage with the sautéed onion and increase the heat. Add salt to your taste. You can also add 1 teaspoon of granulated sugar to balance the acidity of the wine. The sugar is optional, as the cabbage is quite sweet on its own.

Dry white wine being poured into a skillet with cabbage and onions.

Pour in the dry white wine.

A large skillet with cabbage covered with a glass lid, simmering on the stove.

Cover the skillet with a lid and simmer the cabbage over medium heat for 25 minutes.

Golden-brown pan-fried meatballs being placed on top of the braised cabbage in the skillet.

Place the partially cooked, pan-fried meatballs on top of the braised cabbage.

Pour in the dry white wine. You can substitute the wine with apple cider, unsweetened apple juice, or homemade apple cider vinegar. Homemade vinegar is mild and not too strong, making it excellent for braising cabbage.

Cover the skillet with a lid and simmer the cabbage over medium heat for 25 minutes. Stir a couple of times. If all the liquid evaporates before the cabbage is ready, you’ll need to add a little hot water, more wine, or broth.

Place the partially cooked, pan-fried meatballs on top of the braised cabbage. By the way, you can add variety to this dish – try adding julienned ham or sliced sausages. This will create a dish similar to Polish bigos (a traditional Polish hunter’s stew).

Freshly chopped parsley being sprinkled over the braised cabbage and meatballs in the skillet.

Finely chop a few sprigs of parsley and add the chopped parsley to the other ingredients.
