How to Make Baked Potatoes with Cream Cheese and Vegetables

Chopped onions being added to a skillet with melted butter and oil.

Add the chopped onion to the melted butter.

Sautéed onions and grated carrots cooking in a skillet until soft.

Sauté the vegetables for about 10 minutes until they are very soft.

Chopped fresh dill being added to the cooked carrots and onions in a bowl.

Add about two tablespoons of chopped herbs to the sautéed vegetables.

Finely chop a large onion. Place a tablespoon of butter in a skillet and add vegetable or olive oil. Add the chopped onion to the melted butter, sprinkle with salt, and sauté for a few minutes. Grate the carrot on a coarse grater and add it to the onion. If you don’t like carrots, you can replace them with celery root or parsnip.

Sauté the vegetables for about 10 minutes until they are very soft. At this stage, I recommend adding half a teaspoon of sugar and salt to taste. Transfer the sautéed vegetables to a bowl and let them cool slightly.

Finely chop a bunch of dill. Add about two tablespoons of the chopped herbs to the sautéed vegetables. You can achieve different flavors by simply changing the herbs, for example, by replacing dill with cilantro or chives.

A block of cream cheese being added to a bowl with sautéed vegetables and herbs.

Add the soft cream cheese.

A bowl with the cream cheese, vegetable, and herb filling being mixed together.

Thoroughly mix the filling ingredients.

Garlic cloves being thinly sliced on a cutting board.

Slice the garlic cloves into thin slivers.

Add the soft cream cheese and season with freshly ground black pepper to taste. Potatoes absorb juices and oil like a sponge, so use a full-fat cream cheese for the best flavor!

Thoroughly mix the filling ingredients. Taste and add more salt if needed.

Slice the garlic cloves into thin slivers. Place pieces of butter and the sliced garlic in a skillet. The garlic slices will crisp up like chips during baking. If you don’t like this, you can add the garlic directly to the filling.

Boiled new potatoes in a colander, ready for the next step.

Boil the potatoes until cooked through.

Boiled potatoes in a skillet being gently smashed with a spatula.

Press down on the potatoes with a spatula or tablespoon so they flatten and crack.

Smashed potatoes in a skillet being topped with mounds of the cream cheese and vegetable mixture.

Spoon a mound of the cream cheese filling onto each potato.

Thoroughly wash the new potatoes with a brush. Boil the potatoes until tender, drain the water, and let them dry.

Place the boiled potatoes in the skillet with the butter and garlic. Press down on the potatoes with a spatula or tablespoon so they flatten and crack. You can also use a teaspoon to create small indentations for the sauce. Sprinkle the smashed potatoes with salt.

Spoon a mound of the cream cheese filling onto each potato.

A skillet with stuffed potatoes, sprinkled with pumpkin seeds, ready to be baked in the oven.

Place the skillet in the preheated oven for 25-30 minutes.

Preheat the oven to 180°C (350°F). Sprinkle the potatoes with pumpkin seeds. Place the skillet in the preheated oven for 25-30 minutes. If the potatoes start to brown too much on the bottom during baking, pour a little hot meat or chicken broth into the skillet.

And there you have it – a dish that's as comforting to eat as it is fun to make! These baked potatoes are best served hot, straight from the oven, allowing the creamy cheese to melt beautifully into the fluffy potato. For a complete meal, pair them with a fresh green salad. Don't be afraid to customize the filling with your favorite herbs or even add some crispy bacon for extra flavor. We hope this recipe brings warmth and deliciousness to your table. Enjoy every creamy, crispy bite!
