Ingredients for Eastern-Style Buckwheat with Mushrooms
- 200 g grechka (roasted buckwheat groats)
- 200 g cremini mushrooms
- 1/2 dried porcini mushroom
- 80 g onion
- small bunch of cilantro and parsley
- 100 g carrots
- 1 clove of garlic
- ground cinnamon, coriander, nutmeg, cumin
- olive oil
- salt and pepper
How to Make Eastern-Style Buckwheat with Mushrooms
Sort through the grechka (roasted buckwheat groats), and rinse it thoroughly. You can also soak the buckwheat in cold water for an hour, then rinse.
Pour 2 tablespoons of olive oil into a heavy-bottomed pot and heat it up. Dice a large onion. Grind half a teaspoon of coriander seeds and one teaspoon of cumin seeds in a mortar.
Add the diced onion to the hot oil. Sauté over medium heat for 5 minutes, stirring occasionally. Then add the ground cumin and coriander. Sauté the onion with the spices for another 2 minutes.
Finely chop a small bunch of cilantro and parsley (stems and leaves). Crush and mince a clove of garlic. Add 2 tablespoons of the chopped herbs and the garlic to the sautéed onion, and cook for 2 minutes.
Julienne the carrot. Add the sliced carrot to the pot. Sprinkle in half a teaspoon of ground cinnamon and a pinch of grated nutmeg. Stir and sauté over medium heat for 5 minutes.
Grind the dried borovik (porcini mushroom) into a very fine powder using a spice grinder or coffee grinder. Wipe the cremini mushrooms with a damp cloth and chop them coarsely. Add the chopped mushrooms and the mushroom powder to the vegetables in the pot.
If you are using fresh wild mushrooms, rinse, chop, and boil them for half an hour. You can use the resulting mushroom broth instead of water in this recipe.
Add the rinsed buckwheat groats. An adult portion is typically 60-80 g of dry buckwheat. In this recipe, I use slightly less because of the oil, vegetables, and mushrooms.
Pour in 350 ml of water or chicken broth. Add salt to taste. Bring the kasha (porridge) to a boil over high heat.
Cover the pot with a lid. Cook for 20 minutes over low heat. Turn off the heat, wrap the pot in a towel, and let it stand for 10 minutes. Then, gently fluff with a fork. If desired, you can drizzle with extra virgin olive oil.
Serve the buckwheat with mushrooms hot or warm. Sprinkle with finely chopped cilantro or parsley and ground black pepper.
