How to Make Sugar-Free Syrniki with Banana and Cinnamon
Pass the fresh, full-fat tvorog (a type of farmer’s cheese or quark) through a sieve twice to get rid of any hard lumps or grains. Sprinkle the tvorog with a pinch of fine salt to balance the flavors.
Next, crack a small chicken egg into the bowl. One small chicken egg can be replaced with two quail eggs. This won’t affect the taste of the final dish, but it’s a nice variation to try.
A ripe banana should be grated or mashed with a fork and added to the dough.
Mix everything thoroughly and add the wheat flour. You might need a little more or less flour. It all depends on the moisture content of the tvorog, the size of the banana, and the egg, as these are all wet ingredients. To prevent our syrniki (farmer’s cheese pancakes) from falling apart in the pan, we need to bind the wet ingredients, which is what the flour is for.
Add the ground cinnamon and mix the dough. The consistency of dough with mashed fruit is usually similar to thick sour cream.
Generously dust a cutting board with wheat flour. For one syrnik, take a dessert spoon of the dough. Place the portions of dough on the board, then form small, round syrniki and coat them thoroughly in flour.
Heat a non-stick skillet and grease it with a thin layer of vegetable oil or use a cooking spray. Then, add the butter and let it melt. Place the syrniki in the melted butter and fry over low heat. Once they are golden brown on one side, carefully flip them over.
Fry on the other side until golden brown as well. This usually takes no more than three minutes per side.
