Ingredients for Roasted Vegetable and Ricotta Dip
- 2 small eggplants
- 3 large cloves of garlic
- 1 fleshy sweet bell pepper
- 250 g ricotta
- 100 g 30% fat smetana (a type of sour cream, you can substitute with full-fat sour cream or crème fraîche)
- 2 teaspoons khren (horseradish paste)
- 2 teaspoons adjika from hot peppers (a spicy chili paste)
- 1 teaspoon prepared mustard
- salt and pepper to taste
How to Make Roasted Vegetable and Ricotta Dip
Prepare the vegetables. Thoroughly wash the eggplants and a large, fleshy sweet pepper. Separate the head of garlic into cloves. Prick the eggplants and pepper with a fork in several places. Place the vegetables on a cast-iron skillet; you can also wrap them in parchment paper or foil. Put the vegetables in an oven preheated to 180-200°C (350-400°F). Bake for 30-40 minutes. The baking time depends on the size of the vegetables, so I recommend cutting large eggplants in half and placing them on a baking sheet or skillet cut-side up.
Let the roasted vegetables cool. Cut the eggplants in half and scrape the pulp from the skin. Wrap the roasted pepper in plastic wrap, and after a few minutes, remove the wrap and peel the skin off the pepper. Cut it open and remove the seeds and stem. Squeeze the roasted garlic out of its skin; the pulp comes out easily, like toothpaste.
Place the peeled eggplants, pepper, and garlic in a bowl and lightly mash the vegetables with a fork. You can also place the roasted vegetables on a cutting board, chop them with a knife, and drain any excess liquid. This will make the dip thicker.
