Ingredients for Creamy Crab Stick Salad
- 2 hard-boiled eggs
- 100 g creamy curd cheese or full-fat farmer's cheese
- 100 g crab sticks
- smetana (a type of sour cream) and mustard
- a few sprigs of parsley or dill
- ground black pepper, turmeric, salt to taste
- corn, parsley, and buns for serving
How to Make Creamy Crab Stick Salad
Place the creamy curd cheese or full-fat homemade tvorog (a type of farmer’s cheese) in a bowl. I’m not a fan of low-fat dairy products. It’s better to eat a smaller portion to reduce calories without compromising the quality of the food.
To the cheese, add a tablespoon of thick smetana (a type of sour cream) or unsweetened yogurt and 1-2 teaspoons of table mustard. You need to mix the cheese with something soft and liquid to give the salad a creamy texture.
Cover the eggs with cold water, bring to a boil, then turn off the heat and leave them in the hot water for 5-6 minutes. Cool, peel, dice, and add to the cheese. Eggs cooked this way will have a bright yellow yolk.
Dice the chilled crab sticks and add them to the bowl. Don’t consider crab sticks to be something unhealthy or made from mysterious ingredients. This product was invented in Japan, and there’s no actual crab in it, but there’s nothing harmful in the white fish meat (surimi) they are made from. Just choose a well-known brand with a quality guarantee.
Finely chop a few sprigs of parsley—both stems and leaves. Optionally, add half a teaspoon of ground turmeric, and season with salt and ground black pepper to taste. Besides parsley, dill or green basil also pair excellently with crab sticks and egg.
Blend the ingredients with an immersion blender until creamy. If you’re not worried about extra calories, you can add a couple of teaspoons of extra virgin olive oil at this stage.
