Prepare the chicken. Using a sharp, narrow knife, carefully remove the bone from the thigh. Leave the skin on; it will get crispy and golden, making it very appetizing. What’s fried chicken without that golden crust?
Next, marinate the prepared chicken pieces. Start by pouring the dry wine over them (100 ml of wine for the marinade, the remaining 50 ml for the sauce). You can use any dry wine—red or white. However, keep in mind that red wine will color the chicken, giving the golden crust a different hue. For this reason, I prefer to use white wine for marinating; leftover champagne works well too.
Then, add the seasonings: salt to taste, a dry mix of Herbes de Provence, sweet paprika powder, and a drop of fermented soy sauce.
Mix the chicken thoroughly with the marinade and let it rest in the refrigerator for 30-60 minutes. After half an hour, add a tablespoon of neutral vegetable oil to the bowl and rub it into the chicken pieces. You can also leave the meat in the marinade overnight, tightly covering the bowl with plastic wrap.
Heat a large, heavy-bottomed skillet. Place the marinated chicken thighs skin-side down onto the hot skillet. There’s no need to oil the pan, as there is oil in the marinade.
Fry over medium heat until the skin is golden and crispy. Flip the chicken and cook on the other side until done. Boneless chicken thighs will be ready in about 10 minutes total (5 minutes per side).
Transfer the cooked chicken to a plate and prepare the sauce. Everything left in the skillet is valuable, so don’t wash it—just deglaze it. First, pour in the remaining wine and use a wooden spatula to scrape up all the browned bits from the bottom. Then, add the pomegranate sauce.
