Break the dark chocolate bar into small pieces and melt it in a water bath or microwave. It’s important not to overheat the chocolate, just melt it. Overheated chocolate won’t be shiny, and if severely overheated, it can seize into clumps.

There are several ways to assemble the syrki (a popular sweet snack in Eastern Europe, typically made from curd cheese and coated in chocolate). First, you can use a silicone dessert mold. Apply a thin layer of melted chocolate to the walls of the cavities and place the mold in the freezer for 10 minutes. Second, you can use silicone cupcake liners, also coating the inside with chocolate and freezing them. Third, you can first shape the bars from the whipped mascarpone, freeze them, and then coat them with melted chocolate.

Before the chocolate sets, sprinkle the molds with almond crumbs.

Take the mold out of the freezer, fill the cavities with the mascarpone mixture, and return it to the freezer for 15 minutes.

Reheat the melted chocolate and cover the mascarpone with a fairly thick layer. Smooth the chocolate with a spatula and chill again in the freezer for 10 minutes.

Carefully remove the set glazed syrki from the mold. Store them in the refrigerator until serving. To keep the dessert fresh, wrap the syrki in foil or waxed paper.

You can decorate the dessert to turn it into a festive treat. To do this, heat 50 ml of heavy cream, add 50 g of chocolate to the cream, stir, and cool to room temperature. Drizzle the cooled ganache over the syrki and sprinkle with chopped almonds.

And there you have it – your very own homemade glazed mascarpone bars! These elegant syrki are a testament to how simple ingredients can create something truly special. Store them in the refrigerator, wrapped in foil or parchment paper, for up to a week. For a fun twist, try adding a little orange zest to the mascarpone or using different nuts like pistachios. Serve them chilled with a cup of coffee or tea for a perfect afternoon treat. Enjoy every decadent bite!
