Ingredients for the Almond Cake
- 200 g sugar
- 2 large eggs
- zest of 1 orange
- 100 g butter
- 50 g vegetable oil
- 100 g ground almonds

- 1 1/2 teaspoons baking powder

- 250 g mascarpone
- 200 g heavy cream (33% fat)
- 70 g powdered sugar
- pink food coloring

How to Make Almond Cake with Pink Frosting
Pour fine white sugar into a bowl. Crack in the chicken eggs. Add the grated zest of an orange. Wash the orange thoroughly, rinse with boiling water, and only then remove the thin layer of orange zest.
Add a neutral vegetable oil. Add butter that has been softened to the consistency of thick sour cream. Whisk the wet ingredients for several minutes until the sugar crystals dissolve.
Place the almonds in boiling water for 1-2 minutes. Then, transfer them to ice water, and after a couple of minutes, the skins will come off easily. Dry the peeled almonds in a hot oven and grind them into a fine crumb in a blender. Add the cooled ground almonds, all-purpose flour, and baking powder to the batter. If desired, add half a teaspoon of almond extract.
Mix the batter until smooth and let it rest for 10 minutes.
