- 50 g green onions
- 50 g red bell pepper
- 2 cloves of garlic
- 1 hot pepper pod
- 60 ml cold sparkling mineral water
- paprika, red and black pepper, salt

How to Make Homemade Sausages with Onion and Sweet Pepper
Make your own ground meat or use store-bought. To make the ground meat, pass 250g of beef, 250g of pork, and 100g of pork fat through a meat grinder with a coarse plate, and mix well.
Finely chop the green onion stalks and add them to the meat. Slice the stalks lengthwise and rinse them thoroughly to ensure you remove any onion fly larvae that might be hiding inside.
Cut a fleshy sweet bell pepper in half, remove the seeds, rinse, and dice it into small cubes. Add the diced sweet pepper to the other ingredients.
Press the garlic cloves through a garlic press. Crush the hot pepper pod, cut off the stem, and remove the seeds. Chop the pepper finely. Add the garlic and hot pepper to the ground meat.
Pour in cold sparkling mineral water and season the sausage mixture – salt to taste, and add red and black pepper. You can also add a little ground cinnamon and ginger powder; these spices will give the sausages an Eastern aroma. If the mineral water is salty, add less salt to the mixture!
Knead the mixture with your hands or a mixer with a dough hook for several minutes, like you would with dough. It’s recommended, but not required, to chill the finished mixture in the refrigerator for half an hour.
Divide the mixture for the homemade sausages into four equal parts; one portion will be about 170-180g. You can make the portions smaller if you wish.
Form flat, narrow patties from the mixture and place bamboo skewers, previously soaked in cold water, in the middle. Soaking the skewers is necessary if you are grilling over charcoal or in the oven, but it’s not essential for pan-frying.
Place the patty with the skewer in your palm and shape it into a sausage. Repeat to form the remaining three sausages.
I don’t grease the pan with oil; it’s always better to oil the piece of meat, patty, or, as in this recipe, the sausage itself. This reduces oil consumption and, consequently, the calorie count. Pour a little refined vegetable oil into your palm and coat the sausages.
Heat a heavy-bottomed skillet or a grill pan, and place the sausages a short distance apart. Fry for 5 minutes on each side over high heat.
Turn off the heat, let the sausages rest for 5 minutes, and they are ready to be served.
