- 240 g pork and chicken ground meat blend
- 40 g onion
- 1 teaspoon garlic powder
- 1/2 teaspoon oregano
- 2 tablespoons breadcrumbs
- 2 tablespoons chopped cilantro
- 50 ml ice-cold water
- salt to taste
- vegetable oil for frying
- flour, chicken egg, panko breadcrumbs for breading
How to Make Pan-Fried Sausages on Skewers
Place the lean, chilled ground pork and chicken in a deep bowl. If you’re making the ground meat yourself, use equal parts lean pork and chicken breast fillet.
Add finely diced onion to the ground meat.
Sprinkle in the garlic powder. Pour in the cold water. Salt to taste and add half a teaspoon of dried oregano.
Add the breadcrumbs. You can use leftover stale white bread, store-bought breadcrumbs, or panko breadcrumbs.
Mix everything together. If the mixture seems too dry and stiff, you can add a little more cold water.
Add finely chopped cilantro, mix again, and place the bowl in the refrigerator for 15-20 minutes. If you don’t like cilantro, you can replace it with parsley or basil.
Divide the meat mixture in half. With wet hands, form two long sausages on a board and thread them onto bamboo skewers. Don’t forget to check the length of the skewers against your pan and break off any excess.
Pour wheat flour onto a large plate or board. Carefully lift the sausages from the board and coat them in flour on all sides.
In a narrow container or a suitable dish (this recipe uses a herring dish), whisk a chicken egg with a tablespoon of milk or water. Dip the flour-coated sausage into the beaten egg.
Spread panko breadcrumbs on a board. Transfer the sausages from the egg mixture to the board with the breadcrumbs. Generously coat the sausages with breadcrumbs, ensuring there are no bare spots.
Pour refined, odorless vegetable oil into a wide, thick-bottomed frying pan. Heat the oil for 5 minutes. Place the breaded sausages on skewers into the hot oil. Fry until golden brown, about 5 minutes on one side.

At the end of cooking, you can leave the sausages on low heat for about 3-4 minutes to cook through.
Flip the sausages and fry the other side, then turn them on their sides and fry both sides. Towards the end of cooking, you can cover the pan with a piece of foil with a hole for steam to escape, and leave the sausages on low heat for about 3-4 minutes to ensure they are cooked through.
Serve the pan-fried sausages on skewers piping hot. A green salad makes a great side dish. It’s also delicious with homemade mustard. Enjoy your meal!
And there you have it – perfectly golden and crispy sausages on skewers, ready to be devoured! Serve them piping hot right from the pan with a side of fresh green salad, creamy mashed potatoes, or your favorite dipping sauce. Homemade mustard, a tangy ketchup, or a creamy aioli would all be excellent choices. Don't be afraid to experiment with the seasonings in the meat mixture – a pinch of paprika or chili flakes can add a lovely warmth. Enjoy this simple yet satisfying meal!
