Pat the washed meat completely dry with a paper towel and place it on a cutting board. It’s crucial that the lamb chops are thoroughly dried, with no water left on them!

Next, take a sharp knife and carefully trim the meat away from the ribs, leaving the bone clean. Also, trim off most of the fat (if any), leaving a strip no thicker than half a centimeter.
