- 250 g cooked mushrooms
- 1 cup pearl barley
- 2 onions
- 2 cloves of garlic
- 2 carrots
- 1 red tomato
- 2 kvashenye ogurtsy (fermented pickles)
- 30 ml vegetable oil
- 1 liter mushroom broth
- salt, pepper
How to Make Fluffy Pearl Barley with Pickled Cucumbers and Mushrooms
Clean the podosinoviki (a type of wild mushroom, also known as orange-cap bolete), soak them briefly in cold water, and rinse in a colander under running water. Place the podosinoviki in a pot, add 2 liters of water, and bring to a boil. Drain the boiling water, rinse the mushrooms, and pour in another 2 liters of boiling water. Salt and cook until tender, about an hour. Remove the podosinoviki with a slotted spoon and strain the broth. For this fluffy pearl barley recipe, you will need 250g of boiled mushrooms; the rest can be finely chopped and frozen.
Peel the onions and slice them into half-rings. Pour refined vegetable oil into a heavy-bottomed pot, add the sliced onion, and add thinly sliced garlic.
Sauté the onion and garlic for a few minutes, then add coarsely grated carrots. Cook the vegetables over medium heat for 10 minutes, stirring to prevent them from burning.
Sort through the pearl barley—sometimes small foreign particles, like tiny stones, can be found, which are not a pleasant discovery in a finished dish. Add the pearl barley to the pot with the vegetables.
Toast the barley with the vegetables over low heat, so the grains absorb the oil and get lightly fried.
Now, pour in the hot mushroom broth and add the finely chopped boiled podosinoviki.
Scald a ripe, red, sweet tomato, peel off the skin, remove the stem and seeds. Dice the tomato flesh into small cubes and add to the other ingredients.
Dice the kvashenye ogurtsy (fermented pickles, similar to sour pickles) and add them to the pot. Stir, season with salt and freshly ground black pepper to taste.
Cover the pot with a lid and, after it comes to a boil, cook for about 40 minutes over very low heat. Remove the finished kasha (a porridge or cooked grain dish) from the heat, wrap it in something warm, and let it sit for 15-20 minutes to steam through.
