How to Make Hearty Zucchini Fritters with Parmesan and Mushrooms
Peel the zucchini, and use a spoon to scoop out the soft center with the seeds, leaving only the firm flesh. Tender young zucchini can be used whole without peeling.
Grate the vegetable on a large box grater or shred it in a food processor, then place it in a deep bowl.
Important! You should salt the zucchini batter at the very end. If you salt it at this stage, it will release a lot of moisture, which you’ll either have to squeeze out or compensate for by adding extra flour.
Finely grate the Parmesan cheese. This type of cheese is ideal for zucchini fritters, and I don’t recommend substituting it with anything else. Add the grated Parmesan to the bowl.
Crack two fresh chicken eggs into the bowl and mix the ingredients with a spoon.
Add the wheat flour. For those who prefer a healthier option, I suggest using whole wheat flour. If you’re avoiding wheat flour, you can replace it with chickpea or rice flour.
Season the batter—add ground sweet paprika and ground fenugreek. In shops specializing in Eastern spices, you can find ground chaman (an Eastern spice blend, primarily made from fenugreek), which also works well.
Finely chop the fresh mushrooms—this recipe uses orange-cap bolete mushrooms—and dice the onion. Heat olive oil in a skillet. First, add the chopped mushrooms to the hot oil. Once the moisture has evaporated, add the diced onion. Sauté the mushrooms and onion until cooked through.
Let the fried mushrooms cool slightly, then add them to the batter. At this stage, salt the batter and mix thoroughly.
Add a small bunch of finely chopped parsley and mix again.
Grease a non-stick skillet with olive oil. Spoon the batter onto the hot skillet to form fritters and fry for about 3-4 minutes on each side until golden brown.
Serve the zucchini fritters hot with smetana (a type of Eastern European sour cream) or a yogurt-based sauce.
And there you have it—beautifully golden and irresistibly delicious zucchini fritters that are sure to become a new family favorite! The combination of tender zucchini, savory Parmesan, and earthy mushrooms creates a truly memorable flavor. These fritters are best served hot and crispy, straight from the pan, with a generous dollop of creamy smetana or a refreshing yogurt-dill sauce. They make a wonderful light main course or a fantastic side dish. We hope you enjoy every bite of this delightful recipe. Happy cooking!
