Cut the lean pork (from the hip or tenderloin) into long, narrow strips against the grain; this is the convenient and correct way to do it. Drizzle the sliced meat with olive oil and season with pepper.

Remove the seeds from the chili pepper pod and chop it finely. Crush the garlic cloves with a knife and mince them.
