Ingredients for Merchant-Style Buckwheat with Pork and Pumpkin
- 500 g lean pork
- 250 g grechnevaya krupa (buckwheat groats, a common grain in Eastern Europe)
- 120 g onion
- 300 g butternut squash
- 100 g tomatoes
- 30 g ketchup
- 1 L meat broth
- 20 g pork fat (lard)
- 1 chili pepper
- 3 cloves of garlic

How to cook Grechka po-kupecheski with meat and pumpkin
In a roasting pan, melt the pork fat. If you don’t have pork fat, replace it with refined vegetable oil.
To the melted fat, add finely chopped onion. After half a minute, add minced garlic and a chili pepper, sliced into rings.
Sauté the vegetables over moderate heat until the onion becomes translucent.
Grind half a teaspoon each of cumin, coriander, and black pepper in a mortar. Add the ground spices to the vegetables and sauté everything together. The aroma during this process will be absolutely magical.
Next, add diced tomatoes to the roasting pan.
Sauté the tomatoes for a few minutes, add ketchup or tomato puree, and sprinkle in a teaspoon of sweet ground paprika.
Cut lean pork (shoulder, ham) into large cubes and add it to the roasting pan.
Sauté the meat with the vegetables for a few minutes.
Meanwhile, sort the grechka (buckwheat groats), soak it in cold water, and rinse thoroughly under the tap. Leave it in a colander to drain.
Sprinkle the seared meat with ground turmeric and freshly ground black pepper. Preheat the oven to 170°C (340°F).
Pour the rinsed buckwheat groats over the pork and spread them evenly.
Peel the butternut squash, remove the seeds, and cut the flesh into large cubes. Arrange them on top of the buckwheat.
Pour in the meat broth and add salt to taste. You can substitute meat broth with chicken broth or dissolve a couple of bouillon cubes in boiling water, but be sure to adjust the salt accordingly.
Cover the roasting pan tightly and place it in the preheated oven for 1 hour. During this time, the buckwheat will cook and steam, the meat will become tender, and all the spices and seasonings will infuse the grechka po-kupecheski (a traditional Russian dish of buckwheat cooked with meat and vegetables) with their aromas!
