How to Make Vegetarian Savoy Cabbage Gratin

Remove any damaged leaves from the head of cabbage. By the way, I recommend saving the largest outer leaves for making golubtsy (stuffed cabbage rolls) — you can fit a lot of filling into those leaves!

Slice the cabbage leaves into strips about 1 centimeter (a little less than half an inch) wide.

In a pot, bring water to a boil and add salt. Drop the Savoy cabbage into the boiling water and blanch for 2-3 minutes, then drain in a colander. This brief cooking time will preserve the chlorophyll in the leaves, keeping the cabbage a vibrant green.

Add the Savoy cabbage to boiling water, blanch for 2-3 minutes, and drain in a colander


In a skillet greased with olive oil, add the chopped vegetables: first, the finely chopped onion, then the grated carrot, diced tomatoes, and sweet bell pepper. Sauté the vegetables over medium heat for 15 minutes. If you like spicy food, you can add some chili pepper to taste.
